When it comes to sharpening a single bevel Jende Reed Knife, the drill’s pretty much like sharpening other single bevel knives. The front face, all hollow ground, gets that flat-on-the-stone treatment, much like any other blade. But here’s the kicker—the back face or bevel side, usually sporting a beefier angle, has been thinned out. That tweak’s meant to give the edge bevel a longer life and make maintenance a breeze down the road. To sharpen that bevel, you gotta lift the blade until ya feel a “flat” on the stone. Some folks even mark the blade with a sharpie to keep tabs on where the action’s happening. Once that angle’s locked in, that’s the angle to stick with for the rest of the bevel side sharpening. Smooth sailing from there!
