Sharpening Chef Knives

In this instructional video, we delve into the cosmetic cleaning and sharpening process for a chef’s knife. Many local sharpeners often resort to stone grinding wheels or sandpaper flap wheels, resulting in unsightly marks and potential long-term issues such as over-thinning. The knife’s owner had opted for a flat sharpening method, compounding the aesthetic flaws. Despite its functionality, the knife appeared quite unappealing.

Our approach involved using a scotchbrite-like wheel, meticulously working to create a more even surface on the blade. Our goal was to restore the blade to a state reminiscent of its original appearance while concealing as many imperfections as possible. Subsequently, our sharpening procedure commenced, utilizing a 120 grit 4×36 belt sander, followed by meticulous work with a 1K Chosera stone and a finishing touch using a buffing wheel with compound. The outcome significantly improved the knife’s visual appeal, and without a doubt, it left our shop sharper than when it initially arrived.
