Refining Blades: Precision Knife Sharpening at Le Cordon Bleu Taiwan NKUT

Our journey led us to the vibrant Le Cordon Bleu Cooking School nestled within the National Kaohsiung University of Hospitality and Tourism. Our mission? To breathe new life into the worn edges of the kitchen’s faithful companions: the knives. Culinary students, often commencing their gastronomic odyssey with tools that might not match their fervor, were in for a surprise—the gleaming arsenal of Wusthof knives awaited their skilled hands. Kudos to Le Cordon Bleu for setting the stage with such fine cutlery!

Upon arrival, a medley of paring knives, boning knives, chef knives, fillet knives, and a sprinkling of personal blades belonging to both students and instructors awaited our attention. Despite their frequent dances with ingredients, these knives had dulled over time. Yet, amidst the wear and tear, there was an admirable tale of care and maintenance woven into their being. While exhibiting the natural blemishes of age—scratches, dings, and the telltale signs of exposed bolsters—the knives exuded a silent plea for refurbishment.

In focus for our endeavor was the exposed bolster, an age-related issue that begged for remedy. Our solution was elegantly simple: to expertly grind down the bolster, extending past the bevel, subsequently refining and sharpening the edge. Delicately thinning out the transition area, the goal was not just restoration but fortification against the rigors of future semesters.

The tools of our craft were wielded with finesse. Employing a 120-grit belt grinder, the Naniwa 1K Chocolate Bar sharpening wet stone, and a final buff adorned with compound, we orchestrated a symphony of rejuvenation. The result? A razor-sharp edge, artfully shaped to endure the well-intended yet demanding handling and regular steeling throughout the impending semester.

In a visual testament to our efforts, our journey of knife restoration was documented in a video—a testament to the meticulous care and dedication embedded within the culinary world.
