I had previously reviewed Jende’s 600 grit Diamond plate harshly. I had used it as a transition stone after doing a lot of repair and resetting of bevels using ATOMA 140 and 400 grit plates. I was trying to transition to ceramic finishing stones. I incorrectly identified the Jende stone as being as harsh as the ATOMA 400. I was wrong. My neighbor bought over a few abused German steel knives for me to sharpen. This time, I followed the Diamond plates with a 1k, 2k and 3k Chosera. I polished with a 5k Shapton pro. This worked extremely well. Turns out I was using the ceramic finishing stones on the wrong steel. I even used the 600 grit Jende Diamond plate as a starter stone on one knife that just needed a little refreshing. Again, it worked quite well. Turns out, the Jende 600 grit Diamond plate is a good transition plate.
