The FN Big G-3 small fish knife is perfect for cutting and cleaning small to medium sized fish, and also serves as a very capable butchers knife for cutting pork shoulder or pork belly. The wide belly leaf shaped blade of the G3 is hand forged from spring steel with a hardness of Rockwell 60 and the protective black scale coating from forging helps protect the blade and gives it a more rugged, rustic, and all around more manly look.  A small version of the larger Taiwan Tuna Knives, this small G-3 can be used to scrape the scales off fish or cut meat into smaller pieces..

Knife care: Keep clean with warm water and soap. Towel dry immediately. Do not put into dishwasher. The black cladding generally protects the body of the steel from rust, but the exposed edge steel can show signs of surface rust over time. Most surface rust can be removed by the rough side of a sponger, and by sharpening the edge.

Kuo Chang-Shi is most famous for forging the original Green Sword of Destiny from the 2000 movie "Crouching Tiger, Hidden Dragon". His Damascus steel designs incorporate human bones and ashes to imbibe the spirit into the piece, as well as to add some elemental strength to the steel (such as manganese and phosphorus), which is based on historical accounts in ancient Chinese sword making.
