The FN Big 1000 Butchering & Taiwan Tuna Knife is hand forged by Master Kuo from spring steel and has a RC hardness of 60-61. It is a supersized G-4 and fits between the G-5 3XL and the larger FN Big 1400 knives. On larger fish like Tuna, Mahi, Grouper, etc., this knife is used to zip through long lateral, sectioning cuts. The 1000 can also cut through the fish's spine when cutting steaks. It can also be used for cutting pork and beef.

The FN Big series is a collaboration between Jende and Master Kuo to make some seriously large Taiwan Tuna Knives. The black scale from the forge forms a natural protective coating that keeps the blade from rusting. It gives them a more rugged, rustic, and all around more manly look, too.

Knife care: Keep clean with warm water and soap. Towel dry immediately. Do not put into the dishwasher. The edge steel can show signs of surface rust over time. Most surface rust can be removed by sharpening the edge or using a scotch brite pad.

Master Kuo knives are some of the sharpest factory sharp knives we've ever seen, but they are capable of even more after our professional sharpening services. We recommend the 2000 and 5000 Grit services for this knife. You can also add a custom made leather sheath.

Kuo Chang-Shi is most famous for forging the original Green Sword of Destiny from the 2000 movie "Crouching Tiger, Hidden Dragon". His Damascus steel designs incorporate human bones and ashes to imbibe the spirit into the piece, as well as to add some elemental strength to the steel (such as manganese and phosphorus), which is based on historical accounts in ancient Chinese sword making.
