New Edge Sharpening's kitchen knife sharpening service is for blades over 8" (20cm+).This includes chef knives, fillet knives, carving knives, boning knives, fillet knives, and cleavers.
Peter Nowlan will personally hand sharpen your knives, choosing from a wide variety of water stones; which include Shapton Glass, Naniwa Chosera, Kitiyama and Japanese Natural Finishing Stones. All blades are finished on leather strops to achieve the cleanest edges possible.
