Master Kuo G1000 Butchering & Taiwan Tuna Knife is used to cut through the fish's spine when cutting steaks. It can also be used for cutting pork and beef when doing some serious BBQ. It's stainless steel clad version of the FN Big 1000which is a supersized G-4

This G-1000 is made with 3 layered laminated steel. The outer steel is stainless while the inner core steel is a traditional Japanese High Carbon SK5 steel, and has a RC hardness of 60-61.

Knife care: Keep clean with warm water and soap. Towel dry immediately. Do not put into the dishwasher. The edge steel can show signs of surface rust over time. Most surface rust can be removed by sharpening the edge or using a scotch brite pad.

Kuo Chang-Shi is most famous for forging the original Green Sword of Destiny from the 2000 movie "Crouching Tiger, Hidden Dragon". His Damascus steel designs incorporate human bones and ashes to imbibe the spirit into the piece, as well as to add some elemental strength to the steel (such as manganese and phosphorus), which is based on historical accounts in ancient Chinese sword making.
