I’m based in Texas and do a lot of home butchering chicken, ribs, sometimes lamb and I wanted something smaller than my heavy cleaver but still strong enough to handle bones. This knife hits that sweet spot perfectly. It’s compact, but it doesn’t feel weak at all.
The first thing I noticed was how sharp it is out of the box. It went through small chicken bones and joints way easier than I expected, and it’s great for breaking down whole fish too. The blade has a nice balance heavy enough to do the job, but still easy to control for precise cuts.
